  • 1 small red bell pepper, julienned
  • 1/2 cucumber, seeded and julienned
  • 1 handful baby spinach leaves, washed and dried

In a medium bowl, combine the cream cheese, chives, parsley, dill, garlic, lemon juice, salt, and pepper. Mix until smooth and well blended.
2. Prepare the first tortilla
Lay a spinach tortilla flat on a clean surface. Evenly spread half the herb cream cheese mixture over the tortilla, leaving a 1 cm (1/2 inch) border.
3. Add vegetables
Arrange half the carrot, red bell pepper, cucumber, and spinach leaves in a single layer over the cream cheese.
4. Roll tightly
Starting from one edge, tightly roll up the tortilla to form a log.
5. Repeat with the second tortilla
Repeat with the second tortilla and remaining ingredients.
6. Chill (optional)
Wrap the rolls tightly in plastic wrap and refrigerate for at least 30 minutes to firm up (optional, for neater slices).
7. Slice into pinwheels
Using a sharp knife, slice each roll into 2 cm (3/4 inch) pinwheels.
8. Serve
